Vanilla Cheesecake

A couple days ago I got a hankering for cheesecake, so I whipped up a simple vanilla one – complete with a homemade graham cracker crust!

Graham Cracker Pie Crust:

2 sleeves graham crackers, crushed (I used cinnamon-flavored graham crackers, but any flavor will do)
1 stick of butter
1/3 cup white sugar

Melt butter, mix in bowl with graham cracker crumbles and sugar. Mix well and spread evenly in pie pan. Refrigerate for 15-30 minutes or bake in oven at 375 for 15 minutes to let the crust settle.

Cheesecake Filling:

1 pkg cream cheese, softened (two would probably work better; I intended to top my cheesecake with fresh fruit so I used less cream cheese)
1/3 cup white sugar
1 egg
1 tsp vanilla (optional)

Blend cream cheese, sugar, egg, and vanilla thoroughly with hand mixer until mixture is completely smooth and no chunks of cream cheese are visible. Pour into pie crust and bake at 375 for 20-25 minutes, or until pie is set (the filling should be light brown around the edges).

Set out to cool from oven; once cheesecake has reached room temperature, refrigerate at least 4-5 hours or overnight until enjoying. Top with fresh fruit if desired.
