Couscous & Avocado

Avocado and CouscousOftentimes, the simplest meals are the best. I’m single and don’t always like to cook big meals for myself, so this is one of my go-to easy meals for when I don’t feel like cooking.

I use a box of Near East Roasted Garlic & Olive Oil couscous, add in some canned or frozen peas, fresh sliced avocado, and crumbled tofu, and it’s good to go!
